The recipe that helped Tillie win Joe’s heart in Feisty Family Values:

CARAMEL PECAN ROLLS

  • 2 pkg. dry yeast
  • 1/2 cup warm water
  • 1 cup milk
  • 1/2 cup butter
  • 2/3 cup sugar
  • 1 teas. salt
  • 3 eggs
  • 5 cups flour
  • melted butter
  • cinnamon
  • 1 cup brown sugar

Raise yeast in water. Heat milk and butter until melted. Pour into large bowl. Stir in sugar, salt and vanilla. Cool. Stir in yeast, add eggs, heat. Beat in enough water for soft dough. Knead, place in greased bowl, let rise. Divide in half. Roll out. Spread with melted butter. Sprinkle with cinnamon. Scatter 1/2 cup brown sugar on each. Roll up. Cut into 3/4 inch slices. Place in prepared caramel coated pans. Bake at 350 degrees for 30 minutes.

Caramel Pecan Coating:  1/4 cup light corn syrup and 2/3 cup light brown sugar. Heat together until melted. Pour into the bottom of pans. Sprinkle pecans on top.  Serves 4-6

Even the kids love Tillie’s TACO CASSEROLE and Annabelle likes it because it’s easy to make.

SR. TILLIE’S TACO CASSEROLE

  • 1 lb. ground beef
  • 1 package taco seasoning
  • 1 can refried beans (15 oz.)
  • 2 c Monterey jack cheese & cheddar mix (grated)
  • 1 c salsa (use your favorite)
  • 2 green onions, chopped
  • 1 (2 1/3 oz.) can sliced black olives
  • 1 tomato, chopped
  • 6 corn tortillas, cut in fourths (or more if you like)

Brown ground beef and drain. Add taco seasoning with water as indicated on the package. Put layer of tortillas on the bottom of a 8×8″ baking dish. Cook refried beans on stove until hot. Add 1 cup cheese and 1 cup salsa. Stir until combined. Pour beans over tortillas in dish. Add beef layer. Sprinkle remaining cheese on top. Scatter chopped green onions and black olive slices over cheese. Bake at 375 degrees until cheese is melted. Take out of oven, sprinkle top with tomatoes. Let set 2 minutes then serve. It’s great with a salad and tortilla chips.
